Domoda is a slightly spicy stew, based on peanut butter sauce. It is one of the most famous dishes in the national cuisine of the West African states of Gambia and Senegal, where you actually call it Mafé. Domoda is the national dish of Gambia, a peanut stew made with or without meat and served over fluffy rice. If meat is used in the dish, it is usually beef, bushmeat, or chicken. If Domoda is made without meat, any available vegetables can be added into the stew, usually pumpkins and sweet potatoes.

Wash and cut meat into bite size pieces (chicken should be cut into larger pieces). In a cooking pan, boil the meat, onions and chopped fresh tomatoes in water for 10 minutes. Add peanut butter and other ingredients, bring to boil stirring occasionally.

To make the domoda sauce, heat 2 tablespoons of groundnut oil in a large pan and sauté the onion until it starts to brown. Add the garlic and chillies (chiles) and fry for 30 seconds. Add the tomato purée (paste) and stir continuously over the heat for 1 minute. Add the tomatoes and cook for 3 minutes.
